When Valentine Warner, one of the UK's most loved TV cooks and food writers offered to create some new pizzas for us, we jumped at the chance to bring his unique creativity, and passion for food, to life on our menu.
Valentine and PizzaExpress first met back in the 1990s, when he was a waiter at our restaurants. Now he's taken his love for pizza and passion for lesser known local Italian recipes, to develop two amazing pizzas on a classic base for you to enjoy.

One of Valentine's favourite ingredients, this recipe celebrates fabulous fennel. Valentine has sourced delicious soft fennel salami from award-winning charcuterie Trealy Farm, which he then adds to a classic base with passata, fennel seeds, chilli flakes and mozzarella. The pizza is finished with grana padano, and topped with rocket and finely sliced fresh fennel tossed in lemon oil and lemon zest.

A pizza with attitude. Valentine uses the intense flavour of his favourite Italian pasta sauce, the Puttanesca passata. Made with bold and punchy ingredients; salty marinated anchovies, capers and green & black olives are combined with the kick of fresh red chillies, lemon oil, lemon zest and garlic oil. Served on a classic base without mozzarella and finished with fresh oregano.

I've been going to PizzaExpress all my life and in fact worked there as a waiter during my student days so got to eat all the pizza I liked! I'm really proud of the two pizzas we've created and I'm excited to see them on the menu of my favourite pizza place.
I've created two excellent pizzas. The Fennel & Salami celebrates one of my favourite ingredients, fabulous fennel, and features a wonderful fennel salami made specially for us by award winning charcuterie Trealy Farm. Then there's the Puttanesca, an intense, punchy pizza. In homage to my favourite Italian pasta sauce, it's a combination of salty marinated anchovies, capers and green and black olives with a kick of fresh chillies, lemon oil, lemon zest, garlic oil and fresh oregano.
Pizza is a simple joy. For me it's something that should be kept uncomplicated – a few delicious, quality ingredients. Here was an opportunity to create some bold flavours that would appeal to the millions of customers that eat at PizzaExpress. It was a challenge I really enjoyed.
